Simple 3 Course Meal
You know when you’re asked to cook a family meal. No? Well it doesn’t matter, but here’s a simple 3 course meal you can make rather easily, yet it looks like a lot of effort has been used.
Starter- Pizza Tortillas
[To Make 16]
2 x Tortilla Sheets
1 x Tub Of Salsa
Grated Cheese [Depends On Preference]
Using circle cutters, cut out small circles of the tortilla sheets. When using big cutters you get about 8, but with average sized cutters you can get about 16. If you don’t have circle cutters, use other cutters otherwise use a knife or scissors. Place a small dollop of salsa on each one, then sprinkle the top with cheese. This can be served warm or cold, my personal preference is cold, but it’s up to you. They also make a nice snack. Cold it takes about 5 minutes and warm about 10, just for the heating.
Main Course –Spicy Chicken
[To Make 4]
3 tbsp Spice Seasoning/ 2 x Mexican Oxo Cubes
3 -5 tbsp Hot Sauce [Yet again, a preference of what type and how much]
2 tbsp Sunflower Oil
2 x Limes
1 x Chopped Onion
3 x Crushed Garlic Cloves
4 x Chicken Breasts [or 8 x Chicken Drumsticks]
2 x Chopped Spring Onions
2 tbsp light brown sugar
Squeeze the juice out of the limes into a bowl, before adding all the other ingredients. The figures above are not exact, it’s a personal preference thing, and the onions and spring onions can be changed and left out, or more spices can be added. Basically mix it together and spread over the chicken, then cook til they’re done. If the sauce is a little thick, water can be added to help it spread easier, as this will evaporate when cooking.
This chicken can be served with anything, but I’d recommend corn on the cob, which can be drizzled with the same sauce before cooking. This sauce can also be used on vegetables in general, and works well in a stir fry, just encase you or anyone in your family is a vegetarian, or just doesn’t like chicken.
Dessert: Angel Delight
1 x Packet Of Angel Delight Mix
1 x Packet Of Chocolate Sprinkles
250ml of Milk[The milk amount will vary on the pack you buy.]
Pour the milk into a bowl, add the angel delight mix and whisk for 5 minutes before leaving to set for 30. Just before serving sprinkle the chocolate sprinkles on top, then you’re ready to go. Simple but what’s not to like? The sprinkles can be changed for anything, popcorn, fruit, squirty cream, anything you so wish.
If you can’t obtain angel delight, serve ice cream with the sprinkles/fruit/squirty cream…etc…
