How to bake a Victorian Spongecake [incl. pictures]
The Ingredient's
The Equipment.
Instructions.
Step 1: Add 150g of castor sugar, 150g of margarine or butter, 3 medium eggs [preferably organic or free range] and 175g of self raising flower into a small to medium sized mixing bowel.
Step 2: Using an electric mixer, preferably, whisk the ingredients together for 2 minutes. If you want a dark sponge cake, add two tablespoons of hot chocolate powder to the mixture and beat for an additional minute.
Step 3: Preheat your oven to 170C / Fan 160 C / Gas Mark 3-4.
Step 4: Line the two rounded baking trays with baking parchment to prevent the cake from sticking and pour the mixture evenly into both trays, spreading the mixture out in the tin.
Step 5: Bake for 30 - 35 minutes.
Step 6: Remove from tray and allow to cool before decorating with treats of your choice.
How to make blue icing decoration.
Step 1: Put 4 heaped tablespoons of icing sugar into a bowl and add two teaspoons of water. Mix together until it forms a smooth and thick complexion.
Step 2: Add 2 - 3 drops of food colouring. Stir and allow settle.
Do not place on top of the cake until it has sufficiently cooled and is barely warm, to allow a smooth even finish.
And there you have it, a Victorian Spongecake with blue icing, jelly tots and a blackberry jam centre. I assure you, it tastes better than it looks.
